Vermicelli Idli



This is one of my favourite breakfast items, and the best part - no soaking, grinding and overnight fermenting! Except the half hour soaking of the vermicelli in the curd. Recipe adapted from Shilpa's blog.

Ingredients :
1 tsp ghee
1 cup vermicelli
1/2 cup rava
3/4 cup curd
2 tbsp coconut
2 finely chopped green chillies
3 or 4 strands of corriander leaves
2 tsp oil
1/2 tsp mustard seeds
1/2 tsp urad dal
1/2 tsp chana dal
4 to 5 curry leaves
1 pinch baking soda
Salt to taste


In a pan, heat ghee, fry vermicelli and rava for 5 mts.  Remove from pan and soak in curd (yogurt) for half an hour. Mix coconut, chillies and corriander leaves. Shilpa suggests adding more curd if the batter becomes too dry (which I invariably end up doing).

Separately, heat oil, add urad dal, chana dal, mustard seeds, curry leaves and baking soda. Add it to the vermicelli mixture, add salt and mix well.

Grease the idli stand, place the batter and steam.

Tastes good with green chutney. Shilpa suggests chutney powder.

No Bake Cake Event- Roundup

Finally, I got down to posting the roundup. I was supposed to do this last month, but I was so busy with my India trip, the travel back home, the jet lag, the jet lagged 17 month old, unpacking, a couple of quick trips and what not!
So here's the roundup. I did not get too many entries, not sure whether it was because it was not an easy event, or because not many people where aware of it, but to those who did send me their entries, I would like to thank you all and apologize for the late roundup. If I have missed any of your entries, please do let me know and I will post it immediately.. er.. as soon as I can :).

Chocolate Walnut Cake (Eggless).





She used Neeta Mehta's recipe. And this link for the sauce. When she sent me this picture, it looked cool and so I decided to try it out.

My entry to the event -

Microwave Chocolate cake
Adapted from Neeta Mehta, referred by Jyothi Prabhu.





Recipe:

Ingredients:

1/2 tin (of a 14 oz tin) condensed milk
1/2 cup milk
1/2 cup butter (75 grams)
11/2 tbsp powderd sugar
100 gms maida
1/4 cup cocoa
3/4 tsp baking pwdr
3/4 tsp baking soda
1 tsp  vanilla essence
3-4 tbsp chopped walnuts (I used cashew nuts).

Method:

Cream butter and sugar. Add condensed milk, milk and vanilla and beat for a couple of minutes.
Sift maida, baking soda, baking powder. Add to the above mixture little by little and beat well. Add nuts and mix well.

Grease a microwave safe deep bowl. Pour batter and microwave for 5 minutes (only). Leave undisturbed for another 10 minutes.







Let the cake cool down completely. Invert onto a plate and pour chocolate sauce and nuts on top.

Chocolate sauce (modified to my taste) :

Melt 2 oz semi sweet baking chocolate on a saucepan by heating over low heat. Add 1 tbsp butter, 1 tbsp water, 4 tbsp sugar and 1/2 tsp vanilla and stir continuously. Remove from heat.



Just before serving, I heated the piece of cake in the microwave for a few seconds, poured hot chocolate sauce on top and decorated with some nuts. Reminded me of the 'Some like it Hot' cake I used to have with my friends in a place called Cherry Square in M'lore. Yummy times those were!
